Tilapia with Asiago Cheese

Tilapia is low in calories and contains omega-3's making it an excellent choice for a delicious heart healthy meal.  Seafood in general tends to be high in important nutrients like magnesium, potassium, zinc, and iron.  Tilapia is mild tasting as far as fish goes and it is relatively inexpensive.  Nutrition experts say you should eat fish 2-3 times a week.  This recipe is also low-carb as well.  So what are you waiting for?    Parmesan cheese can also be substituted for the Asiago cheese.    A sprinkling of Old Bay Seasoning makes this very flavorful and the cheesy topping makes is extra yummy. Just sprinkle the Old Bay Seasoning evenly over the fish.  You can add more or less to suit your taste. Heat the olive oil in a skillet over medium heat and cook fish about 4 minutes on each side. Remove fillets from skillet and place on a prepared baking sheet.  Spread a thin layer of mayonnaise over each one and then sprinkle Asiago or Parmesan cheese over each one.  Broil for about 4 minu

Roasted Asparagus with Parmesan Cheese

Asparagus is the nutritional start of spring.  The are a dieter's dream, with 12 large spears having only 45 calories and naturally low carb. They contain about 30 percent of the RDA of vitamin A and a generous amount of potassium to help prevent cancer, high blood pressure and stroke.  In addition, asparagus contains no cholesterol and virtually no fat, making it an excellent choice for those concerned about heart disease.  Plus it tastes great in this recipe.  What's not to love about that? This is my favorite way to cook fresh asparagus. Roasted to tender perfection with garlic and parmesan cheese.   First you will need to remove the tough stalk from the end of the asparagus.  To do this grab the asparagus at each end and bend.  The stalk will snap at the point where it starts to get tough.  Place the asparagus in a bowl and drizzle with the olive oil.  Sprinkle on the garlic and salt and stir until coated.
